Tatsoi
I have to say as far a versatile green this asian green is really hard to beat. It's dark green foliage is beautiful to look at and is just a hint at the vitamin packed nutrients contained inside. The added bonus is its super easy to grow. It can be eaten raw or cooked as a stir-fry. For an extreme vitamin boost buy it 2 oz. dried and place it in your smoothie.
Collect the leaves, if purchasing a live plant, and use the same as spinach leaves. salad greens, or lightly cooked. Stir-frying with your favorite light oil is a blessing to any palate.The leaves have a mild, mustard flavor. 'Tatsoi' with stand cold temperatures down to 15°F (–10°C).
